skinless chicken breasts or thighs

cups low-sodium chicken broth

heavy cream

cream cheese

shredded cheddar cheese
1 oz ranch seasoning mix
1 medium onion
diced

cloves
garlic
minced
2
medium carrots
sliced

celery stalks
chopped

frozen corn or peas

turkey bacon
cooked and crumbled (optional)

tbsp olive oil or unsalted butter

tsp
dried parsley or fresh parsley
Salt and black pepper to taste
Instructions
Heat oil or butter in a large pot. Cook diced chicken until browned, 5-7 minutes. Remove and set aside.
Sauté onion, carrots, and celery for 5-6 minutes. Add garlic and cook 1 minute.
Add broth and ranch seasoning. Bring to a simmer.
Stir in heavy cream, cream cheese, and cheddar until smooth.
Return chicken to pot, add corn or peas if using, and simmer 10-15 minutes.
Season to taste. Garnish with turkey bacon and parsley. Serve hot.
